Thai red curry recipe
I was inspired my colleague at work, when I asked him, what should I do make for dinner tonight - something quick and easy? He told me that whenever he had to do something quick and easy, he makes thai red curry.
What you need:
Red curry paste (you can get this at any oriental store)
2 cloves of garlic
1 inch of ginger
Fish sauce
Any type of chicken, I used drum sticks
Potatoes
Coriander
2 cans of coconut milk
Kaffir lime leaves
Get your pot hot, drizzle oil, add a couple of tablespoons of the curry paste and give it a quick stir for half a minute before adding the chopped ginger and garlic (make sure that they don't get burnt). Put your chicken drum sticks and give them a good sear for a couple of minutes before adding the 2 cans of coconut milk.
Add 5-7 kaffir lime leaves (don't leave these out! Personally, I think this is the best part of the curry), add raw pealed potatoes (optional) to the and give it a generous couple dashes of fish sauce. Bring the pot to a boil and afterwards lower to heat to simmer.
Come back 20-30 minutes later, taste the curry and if it needs more seasoning, give it a douple dashes more of the fish sauce. Top it with coriander and serve it with rice (which is also optional as you already have potatoes as starch in it).
It requires little cooking and it is a very quick and easy dish to make, perfect for days after a long and tiring day at work.
